Carrot Zucchini Muffins
Mar 09, 2024I know this isn't strictly about hormone health, but part of my goal for my patients is to help them create rituals of rest that feel nourishing, and to give you options for healthy foods that are delicious and comforting. These are the things that help to build health for the long term. Also, I am passionate about food, so when something goes well in the kitchen, I want to share it!
I love to bake something for my family on weekend mornings when everyone has a little down time. It fills the house with a wonderful fragrance and everyone feels like they are being cared for. Here is a lower sugar, lower starch, higher protein, gluten free, veggie packed muffin that will taste like a treat! If you are avoiding dairy, feel free to use the substitutions I mention.
Carrot--Zucchini Muffins
Makes 16
Ingredients for the muffins:
¾ cup almond flour
1 cup brown rice flour
¼ cup sweet rice flour
1 cup rolled oats
1 Tbsp baking powder
½ tsp salt
1 tsp cinnamon
¼ tsp cloves
1 cup grated carrot
1 cup grated zucchini
⅓ cup orange juice
⅓ cup plain yogurt (Or almond milk)
⅓ cup avocado oil
¼ cup maple syrup
2 tsp vanilla
3 eggs
Topping:
4oz cream cheese (or almond butter)
2 Tbsp plain yogurt (omit if using almond butter)
1 tsp orange zest
1 tsp vanilla
1 Tbsp maple syrup
Preheat oven to 375 degrees
In a large bowl, whisk together flours, oats, baking powder, salt, cinnamon and cloves. In a medium sized bowl, whisk together carrot, zucchini, orange juice, yogurt, oil, syrup, vanilla and eggs. Mix wet ingredients into dry until combined. Line a muffin tin with muffin cups. Scoop ⅓ cup batter into each cup. Bake 25-30 minutes until tops are brown and toothpick comes out clean. While muffins are cooling, combine in a medium bowl cream cheese, yogurt, orange zest, vanilla, and maple syrup. With an electric mixer, whip until it is light and creamy. Add a swirl to each muffin when you eat them. Makes 16 muffins.
